I never thought I’d be someone who enjoyed vegan food.

To be honest, I used to roll my eyes at the idea of a meal without meat. I mean, how satisfying could it really be? But life has a way of surprising us, and here I am, not only eating more plant-based meals but actually loving them.

It all started when I decided to make a small change, just one meal a week, replacing my usual dinner with something plant-based. No pressure, no major commitment. Just curiosity. The first time, I made a simple chickpea curry. It was warm, comforting, and full of spices that made my kitchen smell incredible. And the best part? I felt good afterward, not sluggish or heavy, just satisfied.

From there, it became an experiment. I tried black bean burgers, lentil soups, roasted veggie bowls, and even some desserts made with dates and nuts instead of sugar and butter. Each meal surprised me with how much flavor could come from simple, whole ingredients. I wasn’t just eating salads and tofu (although, to my surprise, I found out I actually love tofu when cooked right). I was rediscovering food in a whole new way.

Beyond the food itself, something unexpected happened, I started feeling better. I had more energy in the mornings, my digestion improved, and I wasn’t hitting that mid-afternoon slump as hard. I’m not saying it was a miracle or some overnight transformation, but it felt like my body was thanking me for the extra nutrients and care.

Now, do I eat plant-based 100% of the time? No. But I do know that when I choose plant-based meals, I feel good about it. Not just for my health, but because I know I’m making choices that are good for the planet, too. And honestly? I never feel like I’m missing out.
